Ingredients

Chicken:

3 chicken breast fillets

40g of smoked paprika

30g of mixed dried herbs

2 garlic cloves, crushed or finely grated with a microplane

5g of salt

Salad:

1 bunch of kale, stalks removed & roughly chopped

2 handfuls of arugula

1 small bunch of fresh basil, stalks removed (keep the leaves whole)

2 crisp red apples, finely sliced

90g of roasted pecans or roasted almonds or roasted walnuts, roughly chopped

60g of Ocean Spray® Craisins® Original Dried Cranberries

Dressing:

100g of unsweetened Greek yogurt

45ml of extra virgin olive oil

1 lemon, zested

1 lemon, juiced

1 small garlic clove, crushed or finely grated with a microplane

Sea Salt & black pepper to taste

Steps

Preheat oven to 205° C.

To prepare the brussels sprouts - trim the stem end and remove the outermost leaves of the sprouts and cut each sprout in half.

Add to a baking sheet lined with parchment paper. Top with 2 tablespoons of coconut oil and cook at 400° for 20 minutes and flip. Add 1 tablespoon of maple syrup, pecans, Craisins® Dried Cranberries, cinnamon, salt and pepper. Cook for 15 more minutes and taste. Add 1 tablespoon more maple, cinnamon, etc. Cook for 10 more minutes, or until desired level of crisp.

Serve!
