Cranberry Banana Bread

Makes 1 x 1kg/2 1/2lb loaf
Ingredients
300g plain flour
225g caster sugar
100g butter or margarine, softened
3
ripe bananas, peeled and cut into 1-2cm chunks
4 tbsp milk
2 eggs
2 tsp baking powder
50g chopped walnuts
150g Ocean Spray® Craisins® Dried Cranberries
Steps
Preheat the oven to 180°C, fan oven 160C, 350°F, Gas 5. Grease and line a 1kg/2lb loaf tin.
Mix the sugar and butter together in a medium mixing bowl until completely blended. Add the banana, milk and eggs, mixing well then add the dry ingredients and mix until just moist.
Stir in the walnuts and Craisins® Dried Cranberries and pour the mix evenly into the prepared loaf tin.
Bake for 1 hour or until a toothpick inserted into the centre of the loaf comes out clean. Turn the loaf out of the tin and leave to cool on a wire rack.
